The hunting of the exquisite, flavourful truffles around Viraggas
The truffle hunting in Viraggas, is more than an activity. These exquisite, flavorful mushrooms, grow in the area of Viraggas. It is more than using a specialized guy-hunter with his trained dogs to dig out truffles from the woods. It is mainly a gastronomical festivity and also a tradition in Viraggas. Almost 15years ago, I happened to dig out my first white truffles, just because I was trying to convert a part of my land which was abandoned for more than thirty five years, to a fertile and cultivated soil for my vegetables. Then, when Viraggas was already in action as a small hotel, my love for cooking, found its perfect place. So, although I do not like to follow fashion or trends, I started to use wild mushrooms and truffles in my dishes. And these dishes were so much appreciated by my guests who are mainly from abroad (already 45 different countries). These guests were and still are, our inspiration to create and to offer, here in Viraggas.
